Beef Chili


Beef Chili Ingredients

  • 1 lb. bacon (chopped)
  • 1 large yellow onion (chopped)
  • 2 jalapenos (chopped)
  • 1 habanero pepper (chopped- don't remove seeds for more heat!)
  • 1 tsp minced garlic
  • 3 lbs. ground beef
  • 1 1/2 lbs. ground pork
  • 3 Tb chili powder
  • 1 tsp paprika 
  • 2 tsp oregano 
  • 1 tsp seasoning salt
  • 3 tsp cinnamon 
  • 1/2 tsp nutmeg
  • 2 Tb cocoa powder
  • 1 dark beer
  • 1 can tomato paste (6 oz.)
  • 1 can crushed tomatoes (28 oz.)
  • 2/3 cup light brown sugar

 Beef Chili Instructions 

  1. Add bacon to a large dutch oven or large pot. Cook bacon on medium heat until crispy. Remove bacon from dutch oven and place off to the side in a small bowl lined with a paper towel.
  2. Leave some of the bacon fat in the dutch oven. Then add your minced garlic until it it becomes soft and fragrant (1-2 minutes). Next, add the chopped yellow onion, jalapenos and habanero peppers. Cook until they become soft and translucent (4-5 minutes).
  3. Add the ground beef and ground pork. Mix meet into pepper and onion mixture, breaking it up as the meat begins to brown. Meanwhile, add chili powder, paprika, oregano, seasoning salt, cinnamon and nutmeg. Continue to stir meat around folding in spices (5-6 minutes). 
  4. Add your dark beer, tomato paste, and tomato puree. Bring liquid to a boil and then turn down heat to a light simmer. 
  5. Next, add the brown sugar and cocoa powder. Cook on low heat for at least 1 hour and up to 3 hours. 

 

Assembly:

  • Spoon chili into a bowl
  • Add 1/4 cup of shredded cheese
  • 1 Tb of chopped red onion
  • 1 Tb of sour cream
  • Top with some sliced jalapenos and drizzle with sriracha chili hot sauce
