Crispy Fried Cheeseburgers


Ingredients 

  • 2 lbs ground beef (80/20)
  • 3/4 cup shredded cheese (American or Monterey Jack or both works best) 
  • 1 yellow onion sliced 
  • 1 Tb apple cider vinegar 
  • 2 Tb olive oil 
  • 1 Tb seasoning salt (Lawry’s or Adobo) 
  • Potato hamburger buns 
  • 1 Tb “ Burger Sauce” (recipe below) 
  • Bread & Butter pickles 

Instructions 

  1. Take your ground beef and use your hands to make small balls of beef. They should be about 2-3” in diameter. Don’t overwork the meat. They don’t need to be perfect. Place the balls of meat to the side on a pan or plate. 

  2. Meanwhile add your sliced onion to a small bowl. Add apple cider vinegar and season with kosher salt and fresh ground pepper. Heat up a small sauté pan or cast iron skillet with 2Tb of olive oil. Grill onions until they start browning (6-8 minutes). Remove from heat. 

  3. Next, place your burger meat on a griddle or flat top (you can use a cast iron skillet or even use your grill). Using a large metal spatula, press down on each ball of ground beef until you form a thin large burger patty. Sprinkle each patty with seasoning salt. Cook for 3-4 minutes on each side. 

  4. While your burgers are cooking  add 1 Tb olive to a small non-stick sauté pan on high heat. Add shredded cheese to the pan and reduce to medium heat. Cheese will start to melt and bubble. Using a metal spatula start losening the edges away from the pan as the edges start to brown. Once the cheese has browned around all edges, place your spatula underneath the cheese and flip it over. Fold over the cheese using your spatula in half. Remove form heat and cut it in half. 

Burger Assembly:

  1. Place burger on one half of the potato bun
  2. Add cheese to burger followed by, grilled onions and pickles. 

  3. Add burger sauce to the other half and place on top. 

Burger Sauce Ingredients:

  • 1/2 cup mayonnaise 
  • 1 Tb ketchup 
  • 1 Tb Dijon mustard 
  • 1 Tb Hot Sauce (Frank’s Red Hot) 

 Add all ingredients to a small bowl and mix together.
