Ingredients
- 1 large head cauliflower (cut into florets)
- 3 eggs
- 2 cups finely chopped corn flakes
- 1 teaspoon smoked paprika
- cup hot saice (I use Frank's)
- melted butter or extra virgin olive oil
- 1 Tb minced garlic
- Kosher salt and black cracked pepper to taste
- Buttermilk Ranch (recipe below)
- Assembly - Flour tortilla, shredded cheese, sliced avocado, thinly sliced radish (optional)
- Beat the eggs in a large bowl, add the cauliflower and toss well to coat.
- Place corn flakes in a food processor and pulse until they are very fine. Add more corn flakes if needed until you have 2 cups of fine crumbs.
- Dredge the cauliflower through the crumbs until each floret is coated and covered fully.
- Place in air fryer for 20 minutes or until crispy. (You can bake in the oven for 20-25 minutes at 425 degrees as well). Repeat with the remaining cauliflower. Bake for 20-25 minutes, turning the cauliflower halfway through cooking.
- Meanwhile, add butter to a small sauce pan until melted over medium heat . Then, add minced garlic and stir for 2-3 no minutes until it’s fragrant and translucent. Add Frank’s Red Hot and stir. Cover on low heat for 15-20 minutes.
- Pour some of the hot sauce over cauliflower and toss in a bowl until coated. Add more hot sauce if needed. Save the excess hot sauce and leave to the side.
- Place cauliflower back in the air fryer or oven for 5 minutes. If using an oven, broil until crispy.
- Serve the cauliflower with extra buffalo sauce, buttermilk ranch, avocado, shredded cheese, radish (optional).
