Buffalo Cauliflower Tacos

Ingredients 

  • 1 large head cauliflower (cut into florets)
  • 3 eggs 
  • 2 cups finely chopped corn flakes 
  • 1 teaspoon smoked paprika 
  • cup hot saice (I use Frank's)
  •  melted butter or extra virgin olive oil
  • 1 Tb minced garlic
  • Kosher salt and black cracked pepper to taste
  • Buttermilk Ranch (recipe below) 
  • Assembly - Flour tortilla, shredded cheese, sliced avocado, thinly sliced radish (optional) 
Instructions 

 

    1. Beat the eggs in a large bowl, add the cauliflower and toss well to coat. 
    2. Place corn flakes in a food processor and pulse until they are very fine. Add more corn flakes if needed until you have 2 cups of fine crumbs. 
    3. Dredge the cauliflower through the crumbs until each floret is coated and covered fully.
    4. Place in air fryer for 20 minutes or until crispy.  (You can bake in the oven for 20-25 minutes at 425 degrees as well). Repeat with the remaining cauliflower. Bake for 20-25 minutes, turning the cauliflower halfway through cooking.
    5. Meanwhile, add butter to a small sauce pan until melted over medium heat . Then, add minced garlic and stir for 2-3 no minutes until it’s fragrant and translucent. Add Frank’s Red Hot and stir. Cover on low heat for 15-20 minutes.
    6. Pour some of the hot sauce over cauliflower and toss in a bowl until coated. Add more hot sauce if needed. Save the excess hot sauce and leave to the side.
    7. Place cauliflower back in the air fryer or oven for 5 minutes. If using an oven, broil until crispy.
    8. Serve the cauliflower with extra buffalo sauce, buttermilk ranch, avocado, shredded cheese, radish (optional). 

 

Buttermilk Ranch Dressing 

Ingredients 

  • 1 cup sour cream (or plain Greek yogurt)
  • 4 Tb Buttermilk
  • Juice of 1/2 lemon  
  • 1 Tb fresh chives 
  • 1 Tb fresh dill 
  • 1 tsp horseradish (prepared in the jar) 
  • 1 tsp garlic powder 
  • 1 tsp onion powder 
  • 1 tsp dried parsley 
  • Kosher salt and fresh black pepper (to taste) 

Instructions

  1. Mix all ingredients together in a large bowl. 
  2. Season with kosher salt and fresh black ground pepper to taste. 

  3. Feel free to add more dill, lemon or chives per your preference. 

  4. Add to your favorite wrap, salad, dipping sauce or my personal favorite…Buf
