Bacon, Sage and Garlic Grilled Oysters

Ingredients

  • 1 stick of salted butter (8 Tb)
  • 4-6 sprigs of fresh sage (chopped)
  • 1 lb bacon (full package)
  • 1 Tb minced garlic 
  • 2 Tb hot sauce (Frank’s Red Hot)
  • Fresh Oysters (on the half shell). 

Instructions 

  1. Take a stick of butter and bring to room temperature until softened. 
  2. Meanwhile, shuck oysters and leave oyster on the half shell (your local fish market will shuck them for you but its fun to do yourself!)
  3. Cook bacon over the stove or in the oven (best way to cook bacon! See instructions at the bottom of the recipe) until crispy.
  4. Place bacon on a paper towel and move to the side until cooled. 
  5. Add garlic, sage, hot sauce to softened butter. Add 3 pieces of crumbled bacon to butter. Stir in ingredients
  6. Using your hands form a log of butter. A butter knife is often helpful to smooth out the sides and edges.
  7. Place in refrigerator for at least 20 minutes or more. You can make a ahead of time and store up to 1-2 days (covered).
  8. Place oysters on the half shelf onto your gas or charcoal grill. 
  9. Slice a piece of the butter log and place on each oyster. 
  10. Cover top of grill and cook oysters for 2-4 minutes or until butter is melted. 
  11. Crumble remaining bacon evenly over the oysters and serve.

Best way to cook bacon…

  1. Lay bacon on a rimmed cookie or baking sheet 
  2. Place in a cold over and set temperature to 400-425 degrees.
  3. Cook bacon 12-15 minutes or until crispy (you can flip bacon over if you want halfway but not necessary).

Easiest and BEST way to cook bacon!!!
